I’ve got a confession to make. I don’t really do Thanksgiving. I have cooked a turkey exactly once, and while nothing went disastrously wrong I found trying to time everything and feed half a dozen extra people sort of stressful. Thanksgiving for us usually means going to my parents’s house for the afternoon and chowing down on my mom’s delicious stuffing. This year we’re doing things a little different. A close friend has invited us to a vegetarian Thanksgiving/going away party. And it’s potluck. And I need to think of a vegetarian dish to bring.
A few weeks back we went to a potluck vegetarian wedding (different friends, apparently I know a lot of vegetarians). It was this awesomely laid back backyard affair, and we had a wonderful time. For my potluck dish I brought giant dishes full of Wholly Guacamole, Spicy Wholly Guacamole, and their new Red Pepper Mango Salsa (which is so fantastically yummy!). The dips were a hit with the wedding guests, and yes I may have just let people think I made all that deliciousness.
4 whole eggs in the shell
1/2 cup Wholly Guacamole dip
1 Tbsp chopped cilantro
1 Tbsp minced green onion
1/4 tsp salt, or optional
1 dash hot pepper sauce e.g. Tabasco, or to taste
1 tsp Worcestershire sauce, or to taste
1 tsp Dijon-style prepared mustard
1 pinch paprika
Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 – 12 minutes. Remove from hot water, cool, and peel. Slice eggs in half, and remove yolks to a mixing bowl.
In the bowl with the yolks, combine the Wholly Guacamole dip, cilantro and green onion. Season with salt, hot sauce, Worcestershire sauce, and mustard. Mix well, and fill empty egg halves. Chill until serving. Sprinkle with paprika just before serving.
I did a test run and they were darn tasty. Or course I’m going to need way more then 4 eggs worth to bring to the party, but I think the recipe should scale well.. I’m also thinking I’ll make a batch of spicy ones, omitting the hot pepper sauce and using Wholly Spicy Guacamole instead of regular. Yum.
