Darn Tasty Instant Peanut Butter Dip

I’m feeling quite proud of myself for coming up with this brilliant last minute lunch for Rainbow.

It’s lunch time and Rainbow is begging for a peanut butter sandwich, but we’re out of bread. So what do we have… How about a peach?  Or no wait, an apple.  Hm… what if I give her a dish of peanut butter for dipping?  Wait a minute, flash of brilliance, what if I take a yogurt cup and mix it with a table spoon of peanut butter?  Hey now we’ve got protein, dairy and fruit!  That’s almost a balanced lunch, right?  She loved it.  I had to chop up a second apple, as she inhaled the first one.

I’m sure someone out there has probably already come up with this, but for me it was one of those brilliant how have I never thought of this before moments.

So here is my “recipe” for darn tasty instant peanut butter dip:
1 wee container of fruit on the bottom yogurt.
1 heaping tablespoon of smooth peanut butter.
Mix and enjoy. (I recommend using a fork and blending it really well.)

From Black Cherry to Peach Mango this seems to work with any yogurt flavour, as most of the fruity taste gets masked by the peanut butter.

    I’ve never seen a recipe like these but it looks and sounds delicious. I especially like how healthy it is.
