Mini Chocolate Brownie Bites {Vegan Dairy-Free Gluten-Free Recipe}

I used my Pamela’s Chocolate Cake Mix to make brownies today and it turned out so good that I wanted to share. Pamela’s does also make a brownie mix, but I already had the cake mix on hand and wanted to use what was in the cupboard. These decadent tasting brownie bites are vegan friendly, as well as gluten and dairy free.

 

Mini Chocolate Brownie Bites

1 package Pamela’s Chocolate Cake Mix
1 package firm silken tofu (12oz)
½ cup soy milk
½ cup cashews (or any other nuts that you have on hand)
4 squares baker’s chocolate, finely chopped

Preheat oven to 350⁰F. Blend tofu until smooth. Add tofu and soy milk to cake mix and mix on low speed. Add nuts and chocolate. Stir until combined. Put batter into mini muffin pan. I used a silicone pan, but if you are using metal I suggest greasing the pan. Bake for 20 minutes. Let the brownies cool for five minutes before removing from pan.

Recipe makes about 36 brownies
