Eggnog Snickerdoodles {Recipe}

December 18, 2013 by Deanna Tousignant Leave a Comment

Christmas cookie time, right?  I saw eggnog in the grocery store and couldn’t resist.
Eggnog Snickerdoodles are my absolute favourite holiday cookie so I thought I
would bake some and share the recipe with you. Enjoy!
Eggnog Snickerdoodle Cookie Recipe

Eggnog Snickerdoodles

For the dough:

3/4 cup butter at room temp
1 cup sugar
½ cup eggnog
2 egg yolks
1 tsp vanilla
2 ¼ cups flour
1 tsp baking powder
½ tsp cinnamon
1 tsp nutmeg

For the coating:

½ cup sugar
1 tsp cinnamon
Snickerdoodle Coated Eggnog Cookies

Directions:

Cream butter and sugar. Add eggnog, egg yolks, and vanilla and mix well. In a separate bowl, combine flour, baking powder, cinnamon and nutmeg. Add flour mixture to the eggnog mixture and beat at low speed till just combined.

Roll cookie dough into small balls (roughly one inch) and place on a cookie sheet lined with parchment paper. Cookies will grow when baking so make sure they are spaced out about two inches apart. Bake at 300⁰F for 15-16 minutes. Place on wire rack to cool.

Mix your remaining sugar and cinnamon in a small bowl to make your snickerdoodle coating. When cookies are still slightly warm, take them one by one and roll them in the cinnamon sugar mixture.

Recipe makes about 48 cookies.
